Fluffiest Vegan Panacakes

These are the most perfect, fluffiest vegan pancakes. And they're made easily with only seven pantry staples that you likely already have on hand! This recipe can easily be doubled or tripled as needed. 

Keep it simple with a dusting of sugar and a light squeeze of lemon, or top with your favorite fruits!

 

Serving(s): 8-10 pancakes 

Ingredients:

  • 1 cup flour
  • 2 tbsp. brown sugar
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • 1 cup non-dairy milk
  • 1 tbsp. apple cider vinegar
  • 1 tsp. vanilla

 

Preparation: 

  1. Add flour, sugar with baking powder, and salt to a medium mixing bowl.
  2. Add almond milk, vinegar, and vanilla to the other medium mixing bowl. Combine liquid and dry ingredients in a large bowl, blend until smooth. Allow 5 minutes for the batter to rest.
  3. Over medium heat, pour about 1/2 cup of batter into a nonstick pan. Flip when the top begins to bubble and cook until golden.
  4. Serve with warm maple syrup, fresh fruit, or powdered sugar. Enjoy!
